1. Who is Fayol SA?

Fayol SA, a French company with headquarters in Tain l'Hermitage some 75 km south of Lyon, is the maker of Le Panyol ovens, known throughout the world for their high quality. Fayol has distributors in many countries all over the world.

2. What makes Le Panyol ovens so good?

Le Panyol ovens are made from a white clay from a unique site in Larnage, located between Lyon and Tain l'Hermitage. The clay from Larnage has been in use since the 16th century for culinary pottery and the material has become a true favourite since 1840, as its refractory quality has become recognized all over the world. Fayol SA operates the quarry in Larnage and continues research and development efforts to find new ways to enhance even more the clay's thermal quality while staying true to the knowledge and traditions of wood fire ovens.

4. How do Le Panyol ovens function?

Thanks to the dome shape and the proportions of the opening, air comes in via the lower portion of the door and naturally circulates to guarantee a perfect combustion while smoke is expelled through the upper part. Heat accumulates in the significant mass of the refractory material of the oven, in an optimal manner. Once it has reached its target temperature, the oven radiates the accumulated heat for a perfect cooking experience. For many hours, in an homogeneous and regular manner, food is then cooked by the accumulation and the return of heat. Depending on the model, 4 to 8 kg of wood is sufficient for the oven to reach a temperature of 400 Celsius, in 90 minutes of combustion.

5. What can you cook in a Le Panyol oven?

Cooking with a Le Panyol oven is a very healthy way to cook: taste, flavour and the full bouquet of food are fully preserved. The long convection guarantees an efficient cooking and provides the capability to cook several items in one firing: roasts, grilled meat, pizzas, pastries, pies, desserts, breads, dried fruits, etc. Food is usually placed directly on the oven's tile, thanks to the nature of the Larnage clay which does not impact in any way the flavour and taste of the food, even at high temperatures. The high heat of the oven acts as a self cleaning agent.
