To facilitate the construction of the ovens, traditionally built out of white bricks in a manual fashion, Fayol SA has developed a family of wood fired ovens in refractory earthenware firebricks, taking advantage of the white clay from Larnage in the Rhône valley of France. This clay is known for its thermal-shock resistance, giving the Le Panyol ovens a long convection time and an even heat distribution for cooking healthy, gourmet dishes.
